In the menus of Indian restaurants, there is a name that is recurrent: the Karai, which is also pronounced Kadhai in Hindi. The Kadhai is a container whose shape looks a bit like the wok. It is deep and it has handles on both sides.
Kadhai traditionally were made of iron or cast iron. They were quite heavy, allowing a very good heat distribution. Kadhai today are made of stainless steel, they are much easier to maintain and can be found in many sizes, big size for cooking and smallest for the service.
There are many Indian recipes that have the name "Karai", when they are cooked in a Kadhai. The most popular among vegetarians is probably the famous "Kadhai paneer".
