Coriander is also known as cilantro. In India it is called Dhania. It is a annual plant which leaves look like parsley but its aroma and taste are very different. After flowering, it leaves seeds which are, like the leaf, much used in Indian cooking.

 

How to use coriander

In Indian cuisine, you can use fresh coriander leaves and fruit or seeds in the same recipe, because they do not have the same flavor.

Coriander seeds are used, such as cumin seeds and mustard in hot oil to flavor the dish.

Coriander powder, crushed from the seeds, is widely used in Indian recipes. This powder is used in all curries and in a basic curry powder.

Fresh coriander leaves are added when the dish is finished cooking, just before serving.

 

Why use coriander

Coriander is a very good digestive aid. Used in a dish it also allows better preservation by retarding its deterioration due to its antioxidant properties.
