The Black tea, also called Anglo-Indian tea, comes from the leaves of the tea tree or Camellia sinensis, which are dried and then oxidized. Black tea is a type of tea more oxidized than the others, which makes it stronger in flavor and caffeine.
It is grown in India in 3 different parts: the variety Assam in the north-east, Darjeeling in the foothills of the Himalayas and the Nilgiris in southern India. It is an iconic hot Indian drink.

 

Using the Black tea

The traditional recipe of Indian tea or Chai combines black tea with milk, sugar and spices, for example either ginger or cardamom or pepper, or cloves. It is also possible to mix various spices for a masala chai, a spiced tea.

 

Why use black tea

Besides the specific properties of spices used and the pleasure to enjoy a Chai, black tea is rich in polyphenol, an antioxidant, and low in calories, protein, sodium and fat.
